emulsification

emulsification /imul′sifikā″shən/ , the breakdown of large fat globules into smaller, uniformly distributed particles. It is accomplished mainly by bile acids in the small intestine. Emulsification is the first preparation of fat for chemical digestion by specific enzymes. See also emulsify.
